Sweet Potato Protein BitesAren’t these the sweetest heart shaped potato protein bites! And by sweetest yes I mean sweet potatoes.These are super easy to make, great for someone just starting out with cooking or who might have extra hands helping in the kitchen. How to:Grab a
large mixing bowl
Immersion blender, electric beater, food processor or blender (anything that’s most convenient for ya)
Spoon or spatula
Cupcake pan or fun shaped silicone baking cups (or you could throw it all in one pan and cut up after)
Then mix
2 cooked and skinned sweet potatoes*
2 eggs
A splash of vanilla
And a generous sprinkle of sweet spices you enjoy (about a tablespoon total)
Cinnamon, apple pie, pumpkin spice, nutmeg, coco powder, ginger
*boil, roast or even microwave potatoes until soft then skin most the skin off
Next scoop
This blender or immersed batter into your cupcake cups
And finally bake
For 20 minutes or until browned on top
