Immersion Blender + Freezer Trash Winter Soup One of my favorite wintertime meals is veggie soup. So naturally one of my most used kitchen tools in the winter is my immersion blender. It’s a great, low mess tool that you can use for tons of recipes. I mainly use mine for soup but they can take the place of a blender or food processor for a lot of recipes and you’ll cut down on dishes to clean! You can order one for under $30 on Amazon. This is the one I have, but there are much fancier ones too. Easy soup recipe to try out your immersion blender Freezer Trash Winter SoupIngredients:Frozen veggies that you are ready to clean out (my last recipe consisted of cauliflower, peppers, brussel sprouts, celery and cucumber) but most veggies in your freezer will workNutritional yeast flakes for protein and thicknessWater to cover veggiesSalt and pepper plus any other go to seasoning(If you don’t have yeast flakes you could also use a cooked bean or legume for protein instead) Now the trick here is I don’t have measurements because it totally depends on how many veggies you have, but eyeball it with the water and yeast. You can always add more! Instructions:In a large saucepan, heat all your veggies with about half as much water Once all the veggies are warm and soft, remove from heat and blend with your immersion blenderReturn to low heat and mix in yeast flakes. Start with a quarter cup and add more if it hasn't thickened at allSeason with salt and pepper and simmer for 20 minutesBlend again if the yeast flakes need a little spinAnd enjoy!
